At Sugar & Flake, our pastries come in three signature styles — flavorful fruit paste, creamy buttery custard, and delicate bean paste. We love using beans because they not only bring a unique, natural sweetness but also add dietary fiber and plant-based protein. Unlike many store-bought desserts loaded with sugar and lard for texture and shelf life, our goal has always been to create something lighter and more wholesome. Since pastry naturally requires some fat, we take the extra step of using natural sugar alternatives like monk fruit sweetener. Although it costs six to seven times more than regular sugar, we believe it’s absolutely worth it—for the peace of mind that comes with enjoying every bite.
Crafting bean paste by hand is truly a labor of love — soaking, blanching, steaming, pureeing, and slowly stir-drying. From dried beans to silky-smooth filling, the process takes over eight hours of care and patience. That’s why we do the hard work for you. All you need to do is take a bite, savor the flavor, and enjoy the goodness.
